Beverage Director Tad Carducci
Crafting the Summit House cocktail and spirit menu represents a homecoming for Tad Carducci as the well-traveled and celebrated mixologist brings his expertise to his native state of New Jersey.
A bartender and restaurateur with more than 25 years' experience in the hospitality industry, Tad is one-half of the renowned duo known as the Tippling Bros., a consultancy that's worked with top restaurants, bars and hotels, as well as importers, distributors and brands to develop award-winning beverage programs. They're also the authors of "Tippling Bros. A Lime and a Shaker: Discovering Mexican-Inspired Cocktails."
Tad is a top-level graduate of the inaugural Beverage Alcohol Resource spirits and cocktails course and has earned certificates from both the Court of Master Sommeliers and Wine and Spirits Education Trust. He's a member of the Bar Smarts national training team and a judge for the Ultimate Spirits Challenge. Tad's work has been featured in Food and Wine Magazine, The New York Times, Bon Appetit, Esquire, Rachel Ray, Travel and Leisure, and many other outlets.
His work with Summit House marks a reunion with Executive Chef Martin Kester, a fellow native of Hacketstown, New Jersey. The two will benefit from each other's education and training, infusing cocktails with delicious flavors developed in Martin's kitchen while relying on Tad's expertise to pair beverages, including international wines, with menu offerings.
The Summit House cocktail and spirit menu has been crafted with the same care and seasonal approach as that of our food. The bar will be approachable in style and feel, offering classic martini and manhattan service that is simple, yet detail-oriented. Other cocktails will be distinct through their use of creative ingredients that replicate time-honored flavor profiles. Below are a couple examples from our debut cocktail menu:
- Mule of the Moment – Tuthilltown indigenous vodka, persimmon, house-made ginger kombucha, burned cinnamon
- Midtown Direct – The Summit House take on the Cosmopolitan. Kaffir leaf-infused vodka, yuzu juice, fresh-pressed pomegranate

Specializing in distinctive terroir-driven wines from around the world, the extensive Summit House wine list will rotate seasonally though remain dedicated to a philosophy that highlights organic and biodynamic growing methods. These wines are crafted with the greatest care and developed using vineyard practices that eschew chemical fertilizers and pesticides.
Our ever-evolving wine list, including a broad selection of by-the-glass offerings, will reflect Chef Martin's innovative seasonal menu.
